Recipe: Cheesy Tikoy Roll

Chinese New Year won't be complete without TIKOY (Niangao)! 
It is the most popular gift dish on Chinese New Year which is believed to bring good luck in this season. 
Let's try something else with our tikoy other than the usual way of eating and preparing it. We love this recipe Cheesy Tikoy Roll recipe from Pepper.ph

You'll need: 
10-12 Lumpia wrapper
10 sticks tikoy
10 sticks Gouda cheese
water as glue for wrapper
oil for deep frying

Spanish chocolate dip:
2-3 tbsp tablea chocolate, unsweetened
1/2 cup water
2 tbsp sugar
1 tsp cornstarch

Prepare chocolate dip:

Put all ingredients in a sauce pan. Turn on fire and whisk continuously until it boils and thickens. Set aside.

To make Deep-fried Cheesy Tikoy Spring Roll:

Put one piece of wrapper on a chopping board. Put a strip of tikoy and cheese on the wrapper. Fold both sides of wrapper and roll. Wet tip of wrapper so it will stick together. Repeat with the rest of the ingredients. Put in the chiller for 30 minutes. Heat oil and deep fry tikoy spring rolls until golden brown. Serve with tsokolate dip.

Note: For easier cutting and wrapping you can put tikoy in a chiller for a few days prior to trying this recipe. If you are using sweetened tablea chocolate, just adjust sugar levels accordingly. You can also use other kinds of cheese for this recipe like gruyere and raclette.
